FRIDAY Trout Filet w/winter slaw Lentil Shepherd’s Pie Dutch Style Borscht Sourdough Flat Bread w/Maggie’s Cheese, olive oil & rosemary and tomorrow…. Nicoise w/smoked bass and greens Multi grain muffins Scones Art-is-in breads, pastries Light snowing falling and kind temperatures promised. Skiing! And a visit to the Ice Sculptures with the camera. That’s the plan.

THURSDAY Retro Lamb Meatloaf Split Roasted Chickens w/Glazed Roots & Brussels Sourdough Pissaladiere -Speck, Marinara, Lion’s Mane Mushroom -Greens, Roasted Corn, Carmelized Onion Maple Apple Tarts Went to Mill St. last night with a friend. Gorgeous historic building and I believe they have a 500 seat capacity during the season of sitting outdoor weather…..this will be the place for grownups who want good beer and food, to meet…..it was crackling with energy. Our 2 flight tasting was served by very attentive and well schooled staff. I like it!

SATURDAY Day 6 at 42 Blueberry Multigrain Muffins Apple Raisin Spelt Scones Art-is-in Pastries & Breads Shortbreads Brownies Tarts and later…..Mapled Apple Crisp Split Roasted Chicken w/Turnip Mash & Green Stuff Last night, sipping a perfect hoppy micro-brew at the office, and a mad scientist friend and I are discussing fermented foods. We are both working on sourdough cultures. Mine are experimental but with classic roots. His will be a bold, somewhat crazy, pure representation of where he lives…..I am intrigued.

FRIDAY I had a great visit with David Nicastro yesterday. We laughed about the adrenaline highs. That self imposed drug of the workaholic and thrill seeker. The drug that keeps you on your feet and functioning, well past the 12 hour days. Do you think that the real chef and food purveyors are just thrill seekers with an intense work ethic? They have to have something to show for their addiction? David had the organic Seville Oranges, that I needed for our Marmalade. Watch for it! Nicastro’s in the Glebe, really does have amazing produce. Something Fish Lamb Ragout w/red wine & prune Pissaladiere Mac’n'Cheese w/Old Amsterdam, leeks & shrooms We are well stocked!

THURSDAY The trees were still wearing their ice corsets last night, the branches forming crystal webs against the blue black sky. Quite beautiful with the lights and distracting….stopped looking after I sailed through the second stop sign. The iced roads ramped up the tension when driving, yesterday. Timing was everything. Starting with the sweet stuff…. Chocolate Mousse, Cream & Plum Conserve Lemon Curd, Cream & Blueberry Conserve Brownies Brownie Bites (whiskey, espresso &….) Blueberry, Raisin Tarts Apple Crisp, sweetened w/maple syrup Savoury options…. Potato Cheese & Peas Pie Barley Mushroom Risotto Crispy Duck Confit Lentils & Shrooms Excellent reviews on the Bison Chili & The Lamb Meatloaf may be the best yet! Richard & Sarah; should I set aside Chicken w/Yak Sausage, Shepherd’s Pie?
