It would be fair to say that we are entirely besotted with Le Coprin mushrooms. We love the variety, we love the tastes, we love the look and we absolutely love that they are local. Christophe of Le Coprin grows an impressive variety of mushrooms in an amazing facility just outside Alcove, Quebec (near Wakefield). His year-round crop includes Oyster, Winter, Shiitake, Nameko, Eryngii, Shimeji and many other exotic varieties. No pesticides or chemical control of any kind is used in the growing process.

We use Le Coprin mushrooms in our rabbit and mushroom pie, duck and mushroom ravioli, and organic du Puy lentils with Niagara red and mushrooms.

Le Coprin delivers to our door twice weekly. Other than in our cuisine, you can find them with Christophe at the Ottawa Farmer’s Market.  Rumour has it that it is also possible to purchase mushroom growing kits (a mixture of sawdust and organic wheat bran supplemented with natural lye and seeded with mushroom spawn).
