Our Tarte Nicoise gives honour to seasonal ingredients and local cheese, much as the Nicoise region of France. It is a rustic, less structured version of quiche, rich with flavour and satisfying as a starter or main. The favorites are the swiss chard and chevre, and the smoked fish and leeks. Of course our fresh roasted tomato and garlic seems much more redolent of the Mediterranean and often sells before it is out of the oven.
